I saw this restaurant advertised in a food magazine whilst waiting at the dentist, and they gave it a very good review. I checked it out on brighton-eating and noticed that actually the reviews weren't so great on here. Still, I am a big foody and have eaten in a lot of restaurants in Brighton, and so I decided to give it a go.
I was very impressed! The dining room is spacious with gorgeous views accross the marina; it was raining and windy but still very pretty, and I am sure that in the summer it's pretty spectacular. Seattle Restaurant is definitely one of my new favourite restaurants in the city. The service was really very good; the young lady was helpful, friendly and attentive. Bread to begin was very tastey indeed, especially the brown which had an excellent crust, a soft centre and was great with the butter provided. The starters (Ballotine of Pheasant for myself, mussels for the lady) were both excellent, and the mains (Roast partridge for me, Fish Pie for my guest) very good. The Partridge was a little overcooked for my liking but in fact the meat was of a good quality and it was still very tender. We didn't eat dessert, but did have an espresso and a chocolate liquor (recommended by the waitress) to finish, both of which were very well done.
I would strongly recommend this place, even though some of the reviews on here aren't so great. I don't know if perhaps I was just lucky that evening, but I'll be returning again soon and will certainly write a second review if standards drop. Fingers crossed this will be my only post for this restaurant!

We went on Sunday for lunch. Lovely decor and the view from the balcony was great. It was a set menu and for £15.50 fairly good value as far as set menus go. Unsurprisingly though, the food was mediocre. What was surprising was the service, which was less than mediocre. The attitude of at least two of the waiting staff was, for whatever reason, superior to the point of abrupt. If they were working for tips they didn't show it. For example, when we asked if they could wrap one of our untouched dishes up for us the waitress reacted as if she had never heard anything stranger (Americans do it all the time!). The staff also constantly bug you about drinks and if everthing is 'OK?'. Fine the first few times but quickly grew tedious. The reception staff at the hotel were similarly cold. Shame, as a really nice spot for a restaurant along the waterfront.

I would highly recommend the Seattle for the al fresco bar area - wonderful on a warm summers night - but if you want a decent meal in the restaurant, I would steer clear - there are far better restaurants on the Marina and far cheaper!
For a start the booking staff need to get their act together. I was initially told when trying to book a table that they were fully booked and had absolutely no availability all night due to large group bookings, a large function etc etc. Literally a few minutes later I spoke to another gentleman to make a reservation for another date and when I mentioned the fact that ideally I wanted a table for that night was told they had plenty of availability and they could fit us in at 8.30pm!
When we got to the restaurant it was in fact nearly empty - there were only three other tables taken and had no atmosphere at all - not great for a Saturday night!
We had our starters which were quite nice but my big complaint was my main meal. My husband had ordered the fish and chips - a huge piece of haddock with plenty of chips and tartare sauce. Lovely. I ordered the grilled lamb's liver with confit kidneys. What in fact came was three tiny slivers of liver on a very small mound of mashed potato and one plain grilled kidney plus a small helping of autumn greens. It tasted ok but it hardly touched the sides and I was still hungry. It was basically a starter size portion. And all for a ridiculous charge of £15.65! Naturally I complained to the waiter who mumbled an apology and then brought out a complimentary plate of petit fours.
When we got the bill we found we had still been charged for this meal, so I complained again and they did agree to take this charge off.
We used to dine at the Seattle when it was Cafe Paradiso and we always had a lovely meal with no complaints at all about portion sizes or quality of food and it always had a fantastic ambience. I don't know if it was a one-off and the normal chef was absent on Saturday, but this experience has put us right off of eating at the Seattle again.

Well what can I say but go and try this restaurant, service was good, food was very good and a good wine list.... Also the bar was awsome loved it very chilled out place to drink... Id go to the bar for a hour or so first, This is a top place to eat and drink.....

Great restaurant, with brilliant views over the marina, I felt like I was in Monaco!! The food was great, unpretentious brittish dishes. The pork belly I had was beautifully cooked. Very good value menu, my main course was £12.50, good wine list too.
